Ingredientes
(2 personas)
- 250 g cous cous
- 1 limón
- 250 ml caldo de pescado o agua con 1 pastilla de
caldo de pescado
- 8 colas de langostinos
- 1 cebolla
- 1 tomate
- sal
Preparación
- Hacemos
el cous cous siguiendo las instrucciones del envase, si no usamos caldo de
pescado, en el agua añadimos la pastilla de caldo y reservamos.
- Mientras
se hace el cous cous, salteamos las colas de langostinos con una pizca de sal y
reservamos, a continuación en la misma sartén hacemos el sofrito: Añadimos un
chorrín de aceite y la cebolla cortada en cuadraditos con una pizca de sal y
sofreímos. Al ratín añadimos el tomate lavado y cortado también en cuadraditos,
damos un par de vueltas y añadimos el zumo de limón. No dejar mucho el tomate
porque si no se queda blando y se deshace.
- Una
vez tengamos el cous cous y el sofrito lo mezclamos todo en el fuego y
emplatamos. El cous cous ha de quedar suelto.
