Ingredientes
- 8
filetes de lomo de cerdo
- 2 salchichas de carne frescas
- 1 cebolla
- 1 pimiento rojo
- 1 pimiento del piquillo
- 1 bote de tomate troceado
- 2 dientes de ajo
- 120 ml de vino blanco
- aceite
- harina
- sal
- pimienta negra molida
- Recortamos los filetes de lomo quitándoles la
grasa que pudieran llevar, los pasamos por agua del grifo, secamos con papel
absorbente y reservamos.
- Picamos la cebolla. Reservamos.
- Trituramos en el vaso de la batidora el
pimiento del piquillo. Reservamos.
- Lavamos el pimiento rojo, partimos por la
mitad, quitamos las semillas y la parte blanca que lleva en su interior y
cortamos a tiras. Reservamos.
- Pelamos y picamos los dientes de ajo en trozos
medianamente grandes.
- En una sartén calentamos aceite.
- Salpimentamos los filetes de lomo, enharinamos
y freímos por las dos caras hasta que toman color. Sacamos y ponemos en una
cazuela.
- En el aceite de freír el lomo echamos la
cebolla y la sofreímos. Cuando transparenta añadimos el tomate troceado, el
vino, las salchichas partidas en trozos y el pimiento de piquillo triturado y
cocinamos a fuego suave hasta que reduzca.
- Mientras en otra sartén con un fondo de aceite
freímos los dientes de ajo picados y el pimiento rojo cortado a tiras. Cuando
está hecho lo incorporamos a la salsa de tomate.
- Removemos unos minutos para mezclar sabores,
volcamos en la cazuela donde tenemos los filetes de lomo y cocinamos unos
minutos a fuego suave.
